On a list of things we love, mythical creatures and colourful cakes are well on their way to the top.

So, discovering unicorn cheesecake was obviously an epic moment for dessert lovers here at SHEmazing! HQ.

This dreamy combination also falls under the title of rainbow cheesecake and can be found in a variety of eye-catching forms on image sharing platforms like Instagram and Pinterest.

Rainbow no-bake cheesecake Be sure to chill each layer (at least 20 minutes) before adding another layer. When the cake is completely done, chill for at least 24 hours (which I didn't do to speed up the filming process so it was a bit softer here). Acetate sheets lining the pan are really helpful when removing it and keeping it secure the recipe for this is on the blog www.christinascupcakes.me under cheesecakes. "No bake rainbow" is using gelatin and the "No-bake rainbow cheesecake without gelatin" is the one I used here and what I prefer for taste and the ease of making it! using @cakesafe icing smoother here to smooth my layers and give it a nice, clean finish
