We love gin and we love cake, so the idea of combining the two is almost overwhelming. 

The gorgeous blogger behind The Gin Baker recently shared a delicious recipe for gin and tonic cheesecake, and we are drooling. 

Ladies, you are going to LOVE this.

What you'll need:

400g of digestive biscuits

180g of butter

50g of cocoa powder

250g of mascarpone

400ml of double cream

Zest of 2 oranges

5 sheets of leaf gelatine

100ml of gin

100ml of tonic water

250ml of orange juice

 

What you'll do:

Preheat the oven to 180C. 

Using a rolling pin and a plastic sandwich bag, crush the digestive biscuits into a fine crumb.

Add to a bowl and combine with the sieved cocoa powder using a wooden spoon.

Melt the butter in a small saucepan and then add to the biscuit mix. Combine with a wooden spoon until the mixture begins to clump.

Lightly oil the base and sides of a 23cm spring form tin and then spoon the biscuit base into the tin.

Using your fingers, press the biscuit mixture into the base and the sides of the tin until well covered.

Place in a preheated oven for 10 minutes, then remove and place in the fridge to cool.

To make your cheesecake filling, add the mascarpone to a bowl and whisk to loosen.

Add you double cream, orange juice and orange zest to the mascarpone and whisk until you have stiff peaks.

Spoon the mixture into your biscuit case about 3/4 of the way up and use a spatula to level out the cheesecake mixture.

To make the jelly add the leaf gelatine to a bowl of cold water and set aside.

In the meantime, combine the gin, orange juice and tonic in a bowl. Add 100ml of the gin mix to a saucepan and bring to the boil until steaming.

Using your fingers, strain the water from the leaf gelatine and add to the saucepan, stirring until the leaf gelatine has completely dissolved.

Sieve back into the remaining gin mixture and leave to cool completely.

Once cooled, slowly spoon the liquid over the cheesecake and then place in the fridge for about 6 hours or overnight to set.

Eat the whole thing… in one sitting!

Oh celebrities really are just like the rest of us! Admit it, you have often contemplated jetting off to Paris at the last minute when your foodie cravings get the best of you.

Why not, really?

At eight months pregnant, Kim Kardashian-West has had some serious food cravings.

However, unlike most pregnant women, Kim satisifed her sweet tooth by flying all the way to Paris for cheesecake at the Hôtel Costes.

She travelled 5,642 miles from LA to Paris for one slice of cheesecake. This is fact.

The confession came out during a recent Vogue podcast. In the interview, Kim said she made the trip in a bid to say farewell to her favourite tasty foods – as one does. 

“[The trip was a] last hurrah of all the food that I’m not going to be able to have for a while," she explained.

The idea being that, after she gives birth to her second child, she won’t be eating any cheesecake… ever. Considering her siblings' fascination with hoarding Oreos in glass jars, we wish her well.

However, despite her last-minute flight, disaster struck as their was no cheesecake left in the restaurant:

Kim said she told staff: ‘”You don’t understand, I leave tomorrow and I flew all the way over here for one night, maybe two nights”. And they said “OK, we’re going to get it.” And they got it and it really made my day." 

This is not just any cheesecake, of course. According to Time Out, the hotel is the place to for celebrity sightings and naturally their prices reflect this:

“All produce is rigorously selected and each dish is carefully executed; but excellent quality comes at a price. You won't pay less than €100 euros and may be treated to some haughty table service. “ 

If you thought maybe dessert was a little pricey then be warned – the humble club sandwich will set you back €28.

Met Éireann says this heatwave is set to continue – so what better way to make the most of the sun than by munching on these delicious frozen treats!

What you’ll need:

  • 1 packet of oreos
  • 1 package cream cheese, softened
  • 1 can sweetened condensed milk
  • 2 tsp peppermint extract
  • Green food colouring
  • 1 carton of whipped cream

What you’ll need to do:

  1. Lightly butter a pan or use a non-stick pan. Set aside.
  2. In a blender pulse the entire package of oreos until fine crumbs.
  3. Press the crumbs into the bottom of the pan and spread them evenly along the bottom. Press them down with the back of a spatula.
  4. Use the same bowl to mix the cream cheese. Using hand mixers, mix the cream cheese for about three-four minutes until very creamy. Slowly add in the sweetened condensed milk and continue to mix with the hand mixers for another two-three minutes.
  5. Using a spatula scrape down the sides and continue to mix for another minute.
  6. Mix in the peppermint extract and food colouring. Do as much food colouring as you want until you reach the desired colour you want your cheesecake to be.
  7. With the spatula, fold in the whipped cream. Be careful to not over mix with the rest of the ingredients.
  8. Freeze overnight or for at least eight hours.
  9. Serve directly from the freezer and return to the freezer as soon as you are finished serving.

You might love dipping your Oreos into a cold glass of milk but once you make these we think they will be your new favourite way of eating Oreos!

This recipe is so, so easy and doesn’t require a lot of ingredients.

They would make a fantastic and impressive party centrepiece.

What you’ll need:

  • 19 Oreo biscuits
  • 500g soft cream cheese
  • 90g caster sugar
  • 1 tsp vanilla essence
  • 2 eggs

What you’ll need to do:

  1. Preheat the oven to 200°C and line a muffin tin with 12 cupcake liners.
  2. Place 1 Oreo biscuit flat at the bottom of each liner, 12 Oreos in total.
  3. Crush the remaining Oreos and set aside.
  4. In a large mixing bowl combine the cream cheese, sugar and vanilla essence.
  5. Beat in the eggs one by one, combining well. Stir in the crushed Oreos.
  6. Divide the mixture between the cupcake liners evenly.
  7. Bake in the oven for about 20-25 mins until the middle is set and slightly firm to the touch.
  8. Put in the fridge when cooled and chill for about an hour or so.
