food

This recipe is not only easy to make but also makes the perfect summer snack.

What you’ll need:

  • 125g plain flour
  • 25g cocoa powder
  • 1 tsp. baking powder
  • 1 egg
  • 60g sugar
  • 2 tbsp. butter
  • 100ml milk
  • 500g icing sugar
  • 1/2-1 tbsp. warm water
  • 25g chocolate chips

What you’ll need to do:

  1. Preheat the oven to 160°C, sieve the cocoa powder, flour and baking powder into a bowl.
  2. Mix the egg, milk, butter and sugar together in another bowl.
  3. Pour the egg mixture into the first bowl, then add chocolate chips. Mix until combined but still lumpy.
  4. Spoon mixture into cake cases and put the tray in the oven at 160°C for 20 minutes.
  5. You can check the muffins are set by cracking the top of the cupcake, if not quite set put back in for a further 10 minutes.
  6. Leave muffins to cool and serve.

A US photographer and journalist from the National Geographic recently paid a visit to Ireland to sample some of the culinary delights in Dublin, and apparently, they were ‘blown away’ by what they found: “The quality, creativity, and dedication to locally sourced ingredients we witnessed were on par with what you’ll find in some of the most sophisticated cities in the world – yet set apart by a uniquely Irish emphasis on comfort and simplicity.”

Well thank you National Geographic – we do try!

After searching high up and low down, the world’s best diet has finally been revealed and it is not too far from Ireland – well, not really…

Channel 4’s documentary, The World’s Best Diet  awarded Iceland the sought after title because of their diet of fresh fish, good quality meat and dairy. Apparently, the Icelandic have the secret to living longer and eating healthier.

Each country or tribe – yes, they even looked at tribes – in the documentary, which was presented by Jimmy Doherty and Kate Quilton, was ranked according to diet based on weekly grocery shop and daily meals and obviously Iceland came out on top.

Italy came in a close second and Greece a close third with the league table basing their findings on life expectancy, obesity, heart disease and diabetes in each country.

Unfortunately, Ireland didn’t come in the top 10 but here is the full list in case you had dreams of living in a country where the people have a good, healthy diet.

If you are a fan of reheating your food, you probably simply plonk it in the microwave and hope for the best

Here are five foods you are most likely to reheat and how to do it so it tastes somewhat edible.

Pizza
Avoid putting this one in the microwave as it will just become chewy. For the best result, pop it in the oven at about 180°C.

Pasta
Don’t reheat this – it will never taste the same and actually tastes pretty good cold.

Casserole
In need of heating that casserole that your mum gave you after Sunday dinner? Well, cover it with a little cling film and place in the microwave on a medium temperature until thoroughly cooked.

Potatoes
Cover your potatoes in tin foil and heat it in the oven for about 10 minutes. Remove the foil and pop back in to make them crispy.

Chicken
When reheating chicken it is important that it is done properly.  Cover with a little cling film, pierce a hole in it and heat on full power for about 2 minutes. Check it is heated thoroughly – if not put back in for a few minutes. Leave to stand before serving.

4am is a strange time of the night. You should be in bed, but you’re in the chippie. At least you’re not the only one – look who else is with you:

 1. The security guard
He’s your man if that scary looking group in the corner kick off!

 2. The loud group of guys
This group of lads are roaring things at girls that come in, all the while shovelling a curry cheese chip into their gobs…sexy.

 3. The food fighters
The food fighters usually end up being the same group of lads that will eventually get kicked out by the security guard. They use their chips as missiles against rival groups, with some unfortunate people getting caught in the cross fire as they make their way to the toilet.

 4. The messy eater
It’s unclear whether this person is always a messy eater or whether the alcohol is to blame, but either way they can usually be seen sitting at a table covered from head to toe in lettuce, ketchup and crumbs.  It’s a similar story for the table in front of them, the floor at their feet, and sometimes even the wall beside them.

 5. The feasters
These type of people will sometimes actually save their money, often not buying the last drink in the night club, just to buy an absolute mountain of food once they get there.

 6. The guy/girl who just finished his shift
Very easy to spot, this person is usually dressed in all black as they’ve probably just finished a shift as a waitress or barman in one of the night clubs that all of the drunk people have just come from. They make a nice difference to the roaring and shouting going on, quietly grabbing their takeaway and running out the door.

7.  The staff
Those poor, tormented people.

 8. The sleepers
Another type of person that the security guard isn’t a massive fan of. They can usually be seen sitting upright with a chip hanging out of their mouth and  a half eaten burger in their hand.

 9. The emotional wrecks
They sit there weeping into their happy meal with their friend consoling them after they were rejected by the ‘love of their life’, or, even worse, they lost their phone. The happy meal is bought to try and cheer them up, but to no avail. Happy meal toys are a very common souvenir from a night out, and are more fun when you’re drunk then they ever were as a child.

 10. The loners
Not only does this person not know where their friends are, they also have no means of contacting them because their phone is out of battery. It is also common for them not to have any money. They seem to have lost all hope and are just resigned to sitting in the chippie. You might try and be a nice person and help them, but there’s really no point. They’re better off alone.

 11. The people too drunk to function
The only reason they’re in the place is to sit down somewhere without the risk of getting rained on, mugged or something because there’s absolutely no way they’re able to get any food into them. Their friends might insist on buying them something and try to sober them up before they get into the taxi to reduce the risk of them getting sick.

12. The people who are too sober for this shit
Usually left with the task of looking after the person who is too drunk to function, they sit there with a grumpy look on their face as the only reason they’re there is because no one would get a taxi with them when they wanted to go home. If they had had their way, they would’ve been in bed an hour ago.

We’re so excited about all the festivals coming up this summer – and while you may have spent days planning your outfit, one thing that often gets forgotten about is how you’re going to keep yourself fed over the weekend.

No one wants to fork out a fiver for a burger, so be smart and bring food that you can easily snack away while watching your favourite act too.

Pasta salad
Prepare a healthy pasta salad in a tub and keep it in a freezer bag (or outside the door of your tent – it is Ireland after all). The carbohydrates will give you energy and add some veg to get your dose of vitamins.

Bread
A slice pan is always a welcome food source at any festival. Even if you forgot to bring a knife to spread the butter, you will thank your lucky stars that you remembered the slice pan when you wake up after a particularly late night!

Hard boiled eggs
A must have at any festival – eggs are loaded with protein and good fat. Get them into ye!

Cooked chicken drumsticks
Cook some chick drumsticks before you go and put them in re-sealable plastic bags – this way you can turn the bag inside out and eat them without getting your hands all messy!

Jellies
Well, you’re there to have fun right? And you need to keep your blood sugar up, obvs.

A new Instagram account ‘You did not eat that’ has been set up in order to shame skinny women who post photos of food, that according to the account holder, they couldn’t have possibly eaten and remained skinny.

The anonymous person behind the account says they are calling people out for portraying an unrealistic lifestyle:

“If you’re a size zero, and you’re frolicking in a tiny bikini on the beach, you probably did not eat the doughnuts that you posed with the sunglasses. It’s just presenting this curated life that’s beautiful and perfect and totally unrealistic. More power to you for rocking that! You look awesome! Don’t lie about how you got there! It’s fine.”

While we’re all for keeping things real, this person seems to have forgotten that there are a lot of slim people out there who DO eat proper meals, and who NEVER skip out on dessert. Let’s all remember that there are lots of different shapes and sizes out there and that body shaming one another is never an okay thing to do.
