So Ireland has gotten more than a little bit obsessed with gin, and now there is an entire festival dedicated to the stuff coming to the capital.

Ginfusion is coming to Dublin, and the G&T drenched drinks festival will be taking up residence at the Bernard Shaw.

Utilising both the Eatyard and Shawyard spaces, this festival promises great food, gin tastings, Djs, live music, workshops, pop-up markets, classes, cocktail bars, and, most importantly, the craic.

The event will run across four days and nights across the June bank holiday weekend (so the prefect post-Forbidden Fruit jaunt?).

The festival sounds like the ultimate summer experience, and best of all, admission is FREE.

If you're planning on having a tipple this long weekend, we'd suggest you opt for gin.

As well as being oh-so-delicious, a new study has found that it actually speeds up our metabolisms too.

According to new research, which was published in Food & Nature, gin apparently helps our bodies to burn calories more efficiently.

The study, which was carried out in the University of Sigulda in Latvia, saw scientists give two groups of mice the equivalent of a shot of water and a shot of gin.

The mice who were given water saw no increase in their metabolism, however, the mice who were given gin saw a 17 per cent increase in their metabolic rate.

One of the authors of the research paper, Professor Thisa Lye, said: "Consumption of gin resulted in a marked increase in metabolic rate, which indicates the spirit may have a slimming effect on the body."

Hands up who's having a G&T tonight?!

So, there's going to be an Irish gin and cheese festival happening THIS May – and we are probably a lot more excited then we should be.

To celebrate some of Ireland's best gins and cheeses, the Burren Slow Food Festival, which will take place on 12th, 13th and 14th May 2017, will bring together food producers, chefs and writers for a weekend of talks, demonstrations and workshops.

And the best part?

There will be a huge showcasing of the best of Irish gin including Blackwater Gin, Drumshanbo Gunpowder Irish Gin, Dingle Gin and Shortcross Gin.

Dublin’s leading mixologist Oisin Davies will also be there making unique cocktails with wild and foraged ingredients.

For the first time, Ireland’s raw milk cheese presidium will be at the event, hosting workshops and tastings of raw milk cheese, many of which are not widely available nationwide.

The presidium, which is made up of eleven artisan dairies work with their own distinctive style and techniques and share a common commitment to producing a safe, high-quality product using raw milk from their own cows or goats, or milk from nearby herds.

The three-day event will also include a farmers' market, foraging, children’s activities, the traditional Burren Slow Food Banquet as well as a champagne and seafood picnic in a boat under the Cliffs of Moher.

A gin and cake combination? Say no more…

Check out this DELICIOUS recipe courtesy of The Gin Baker, you'll be glad you did!

What you'll need:

125g of unsalted butter, at room temperature

125g of caster sugar

125g of self-raising flour

2 eggs

2 tbsp of milk

½ tsp rose water

For the lime syrup:

Juice of 1 lime

75ml of water

2 tbsp caster sugar

For the buttercream icing:

140g unsalted butter

300g icing sugar

50ml raspberry gin liqueur

Pink food colouring

What you'll do:

Preheat your oven to 180ºC.

To make your cupcakes, cream the butter and sugar together in a bowl. Add your eggs one at a time and combine well.

Add your sifted flour and milk and mix until you have a smooth cake mix. Stir in your rose water.

Line a 12-hole muffin tin with paper cupcake cases and spoon the mixture evenly into the cases.

You can use an ice cream scoop for this to get an even amount in each case. Then place your cakes in the centre of the oven for between 18-20 minutes.

Remove your cupcakes from the oven once they are golden brown on top and a skewer can be placed through the centre and come out clean.

Leave your cupcakes to rest for 10 minutes in the tin and make your glaze.

In a saucepan, add your lime juice, water and caster sugar bring to the boil over a high heat. Reduce the heat and leave to simmer for 5-10 minutes, or until reduced and thickened.

Brush or spoon your syrup on top of your cakes whilst they are still warm and your syrup is hot.

To make your Raspberry Gin butter cream, cream together the butter and sugar using an electric handheld whisk until light and fluffy.

Gradually add in the gin until it is all incorporated. If the mixture begins to split, add a few more teaspoons of icing sugar. Add a capful of food colouring and combine.

Pipe or spoon the raspberry icing onto the top of each cake. Then top each cake with a raspberry, a small slice of lime and a mint leaf.

Gin school? Hell, yes.

That's right, Ireland's first gin school is opening up and we couldn't be more excited.

In conjunction with the launch of a new premium gin, Listoke 1777, a gin school is opening up and will be held in a swanky, purpose-built distillery in Co. Louth.

It will offer unique experiences such as the history of gin, learning the secrets behind the booze and also making your own bespoke bottle.

You will also be able to tour the new distillery, with G&Ts being served throughout the day to keep you going.

Now, that's a kind of school we could get into!

James McKenna, Sales and Marketing Director for Listoke Distillery, said, "Having recently returned to Ireland after 18 years working in the bar industry in New York, I was struck by the interest in gin, and saw the opportunity to recapture Ireland’s heritage of spirit production."

Where do we sign up?!

We've guzzled down a few G&Ts in our day, but when it comes to making them at home… let's just say we're drinking them more for the buzz and not for the taste.

It's a simple drink, but there's a fine art to combining the perfect flavours. So, to help all of you gin lovers out there, here's all you need to make the tastiest G&T.

The Gin Foundry has come up with a fab chart, or 'gin tasting wheel' which matches various gins with the appropriate mixer.

According to the chart, clean gins go well with cucumber and apple, while herbal gins go well with rosemary or basil.

But the chart does more than just match ingredients, it can also help you to identify the different aromas and improve your tasting vocabulary.

The Gin Foundry website reads: "Most of us have been brought up to understand and recognise colours and shapes by name but most of us have never learnt how to express flavours in words.

"So, with that in mind, Gin Foundry have created this Tasting Wheel in the hopes of helping those in trouble to develop a more educated palate and empower them with ways to articulate it."

Goodbye dry January…

Our two loves have been married in this NEW concoction by Belgian chocolatiers Xolato.

The gin infused with Columbian cocoa beans, Pietmonte hazelnuts, Avola almonds, wild Madagascan chilli peppers and vanilla, sounds like the PERFECT way to break our dry January goals!

Speaking to the Martini Whisperer, Stieven Victor, director of Xolat said, “We wanted to make something different from everything that was out there and were already into chocolate with our Belgian chocolate brand Xolato.”

“So we decided to try if a cocoa infused gin could work. Our first thought was that it would taste horrible.  We ended up with more than 20 different versions and found something really delicate and special about the final version.”

Earlier attempts have been made to perfect a chocolate gin, but the Ely Gin could only be legally classed as  a “juniper and chocolate flavoured spirit drink”.

Described by the Xolato as an “aphrodisiac”, we’re certain January won’t be dry at all!

It's hard to believe that it has already been two years since Brian O'Driscoll hanged up his rugby boots.

But 24 months on, Brian hasn't stopped and is currently getting ready for a new business venture.

Margot Robbie is a total QUEEN, who we all love and adore, but wait until you see what she had for her wedding dinner.

The actress married her long-time boyfriend, Tom Arkley, on Monday in a super secret ceremony – so secret, her guests didn't know where they were going until the day.

Margot and Tom tied the knot in front of 50 guests and then partied the night away poolside.

And on her wedding menu? Well, the blonde beauty opted for a BBQ, and pizza (because no food on this earth is more enjoyable).

But that's not all, according to The Northern Star, she also served Coco Pops for dessert and purple gin for after-dinner drinks.

Now that's a wedding dinner we'd actually eat.

Gin has definitely been the most popular drink of 2016, and we are totally OK with that.

With Christmas right around the corner, and the festive season in full swing, we think it is time to sit back and enjoy a nice gin and tonic (hold the tonic).

We recently came across mince pie flavoured gin, which is basically Christmas in a bottle.

The company behind this wondrous beverage is called Sipsmith, who describe themselves as "pioneers of the gin revival".

You can get your paws on a little 90ml bottle of this sweet elixir, alongside a 50ml bottle of ordinary gin, for £20.

The kicker is that the drink is currently sold out, but we are hopeful that they will do a cheeky restock before Christmas.

Merry Gin-mas to all.
