Ireland

It’s warm! No really – it’s proper warm out.

In fact, it’s a day to venture outside without so much as a hint of a geansai. And it’s time to wear your sandals with pride too. Yes, leave your sunnies on… there are no clouds in the sky (seriously – we just checked).

For many of us, it will be only right and proper to mark the occasion with a cool cocktail of sorts. It’s officially a school night, admittedly, but we have no idea when the weather will take a turn for the worse – so it’s probably best just to take action now.

Here, we’ve compiled three of our favourites…

Vodka-lemon slush:

  • 500mls lemonade
  • 500mls of orange juice
  • Three dessert spoons of sugar
  • 7UP or Sprite to top up with
  • 750mls vodka

Makes enough for an evening soiree

  1. Leaving the 7UP aside, in a large plastic container (eg a big lunchbox) combine all ingredients and mix well.
  2. Cover and freeze overnight.
  3. To serve, scrape a spoon across the top of the frozen mixture and then half fill a glass with the slush.
  4. Top it up with 7UP and enjoy.

Crushed berry gin:

  • 10/12 frozen mixed berries
  • One teaspoon of sugar
  • Ice
  • A squeeze of lime and lemon juice
  • Two fresh strawberries to serve (if you're feeling fancy)
  • 50mls gin

Makes one crushed berry gin

  1. You can make these for individuals or in smaller batches – ideal if you don’t plan on consuming an entire bottle of spirits (hardly advisable at the best of times).
  2. In a blender, combine the ice, sugar and frozen berries.
  3. Squeeze a dash of lime and lemon over the mixture, add your rum, and then top up with 7Up to taste.
  4. Blend again until smooth..
  5. Pour into a glass and serve – garnishing with sliced strawberry.

Classic mojito:

  • 8 mint leaves
  • Half a lime, chopped
  • Crushed ice
  • 15g of brown sugar
  • Soda water
  • 80mls white rum

Makes two classic mojitos

  1. Mash up mint, lime, and sugar in a cocktail shaker – or just stick in a sandwich bag and hammer with a rolling pin.
  2. If you’re using a shaker, next add a generous scoop of ice and then the rum. If you’ve gone down the sandwich bag route, transfer into a large bowl before adding the same.
  3. Shake/stir until well-mixed and then strain equally into two chilled glasses.
  4. Top up with soda water to taste.

The former Ireland international rugby star and his fiancé of one year tied the knot day in Marbella.

The pair got engaged this time last year in Barbados. Peter got down on one knee at the five-star hotel Sandy Lane – incidently the same place where Tiger Woods married his now ex-wife Elin Nordegren in 2004.

The former model from Cork and wore a beautiful tight-fitting dress with a fishtail and long veil. She also shared a photo of her fabulous LK Bennett shoes on Instagram.

Her new husband and former Munster player chose navy for his suit, and a pale pink tie. The bridesmaid wore a lust-worthy pair of Jimmy Choo heels with her beige below-the-knee dress.

Nadia Forde, Paul O’Connell and Donncha O’Callaghan were among the high-profile guests who joined the happy couple for their Big Day.

While the couple have decided to postpone their honeymoon until later in the year, they will be spending the rest of the week enjoying their newly wedded bliss in sunny southern Spain.

Every year without fail, you're going to be witness to one, if not all of the following Irish spectacles. We do love the sun, and it's not exactly an every day occurrence on our little island.

Needless to say once we get even the slightest notion that the summer sun is finally upon us we can go just a little bit over board.

Here's a list of the six signs summer has finally arrived:

1. Any excuse for an ice cream

Let’s be honest, even if the days are longer we all know that doesn’t mean those hours are any warmer than November. So with the temperatures likely to take a nose dive at any second, the minute the sun appears from behind the clouds, the line at your local shop is going to be out the door with people wanting to get their hands on the famous 99 cone.

2. That summer glow

You can’t blame us for getting over excited when people start mentioning double figure temperatures for the weekend. Between festivals and BBQs there’s always going to be one poor soul shuffling into the office Monday morning feeling a little warm after their outdoor excursions. When will we ever learn….

3. Festival photos everywhere

Logging onto Facebook during the summer months means you’re highly likely to be exposed to unending status updates and rain soaked selfies of your friends huddled in muddy fields having the best banter at any one of Ireland’s many, many music festivals. Ponchos are going to be on trend, get yours before it’s too late (and your hair is still half-way decent)!

4. The exam heat wave (still waiting)

Every year without fail, the first week of June is promised to be a scorcher. Of course we all want everyone to pass their exams with flying colours, but mostly we tend to be looking for any excuse to get our shorts out for the sunshine while the nation’s teens are being kept busy.

5. The summer body preparations

While we’re all for staying fit and healthy, this phrase is going to be heard loud and clear around the country. As the realisation that the time has almost come to bare our sun deprived bods on beaches all over the world sinks in, the challenge is on to feel our best in our new bikinis.

6. The packing struggle is real

And you thought summer holidays were all about being your most relaxed self, yes? No. It could be because our climate is known for being unreliable, and we live in fear of being caught without a brolly, but packing for our holidays is totally stressful.

Don’t even mention the added pressure of budget airlines and their luggage restrictions!

Last weekend saw our little island make history by being the first country in the world to introduce marriage equality by a popular vote.

All eyes were on Ireland as we turned out in force to polling stations to cast our vote, many travelling from far and wide.

#HomeToVote began trending and the tales of people travelling – sometimes from far-flung countries in Africa and Asia – to ensure a 'yes' vote captured the hearts of people worldwide.

The hashtag was used more than 72,000 times in just 24 hours and Twitter has decided to commemorate this by painting #HometoVote on the wall in their San Francisco HQ.

People shared heartwarming tweets as they made the journey home for May 22 and we are so proud that we managed to capture such widespread attention.

One image which was shared numerous times on social media depicted hundreds of people slowly making their way through Dublin Airport as they arrived in the capital on the eve of the referendum.

Here at SHEmazing! we’re not going to ask you to vote yes in tomorrow's marriage referendum.

But then, we’re not going to tell you to vote no either. And we’re unwilling to weigh-in on what age our presidents should be.

Here’s what we are requesting: that you vote.

Tomorrow is a hugely important day in this country’s history. But in many other ways, it will be like any other Friday.

Because it will be busy and it will be hectic. People will be jumping on buses, sitting in traffic, going to work, juggling appointments, and honouring commitments. And we all know how unexpected annoyances crop up at the most irritating of times.

In short, despite good intentions it’s not always easy to make it to your local polling station.

But if you’re unable to vote, then you’re unable to make your voice heard, and you will be prevented from exercising your right to shape this country’s future.

So please, don’t assume you’ll vote “at some stage”. Instead, plan your day; leave your house a half an hour before you usually do; get an earlier bus home “just in case” – but do whatever it takes to guarantee that you are present and correct, free and able to mark the yes or no box as you see fit.

And then, as the result emerges over the weekend, you can at least know that you played your part – regardless of the outcome.

Polling stations will be open from 7am to 10pm. See www.refcom2015.ie for more information.

It’s that time of the year again – no burgers and no drink. You’ll survive until Saturday – we promise!

Here are some foods that are traditional in Ireland at this time of the year; from the foods we grew up with to the more modern additions.

1. Hot cross buns
Traditionally eaten on Good Friday, hot cross buns are sweet, mildly spiced raisin buns with a cross on top of them. Delicious with some real butter and jam.

2. Lamb
A significant part of Easter Sunday dinner, not just because lambs are in season but also because apparently the Pope eats it on this day too.

3. Creme Eggs
They only appear once a year for a certain amount of time so do we take advantage? But, of course. How do you eat yours?

4. Fish
Given that meat is not allowed on Good Friday, many Irish families will enjoy a lovely fish dinner this evening. Unless they’re the rebellious type your granny gossips about.

5. Tea
It may not seem traditional but seeing as you can’t go for a pint or a glass of wine, tea is definitely consumed more on Good Friday.

6. Chocolate
An obvious one but probably the best. Easter eggs are the highlight of this traditional weekend and looking for them was such craic when we were kids.

In a very stylish throwback to the ‘90s, Miriam O’Callaghan hosted Prime Time wearing a choker on Tuesday night and Ireland is having a very hard time dealing with it…

Speaking about her love of the choker and confirming that she, in fact, hasn't started working at Urban Outfitters, Miriam told The Independent: “The reaction has been hilarious. I love choker and always did so I am delighted they are all back in fashion … I got a hugely positive reaction to it so happy days. I will wear another one tonight.”

That’s all well and good Miriam, but any chance you can bring back hair swirls too? Pretty please?

Poor Enda Kenny had a bit of an awkward moment celebrating St. Patrick's Day in The White House yesterday!

Enda went to shake hands with the President, who failed to notice his hand and Enda did his best to cover up by checking out his nails.

The clip has now gone viral around Ireland and we reckon it won't be long until it's worldwide!

Every country has its own distinct foods, but Irish food takes it to a whole new level.

No, we may not have invented French bread or hummus, but have you HAD a hot chicken roll lately?!

Here are the 10 foods Irish people everywhere just love:

1. Bacon and cabbage
This old Irish meal may be losing popularity as generations go by, but you’re still bound to get a good feed of bacon, cabbage, spuds,  white sauce and carrots boiled to within an inch of their lives when you visit your nana!

2. Club orange
Or, as Tommy calls is ‘fizzy orandge’. There is a definite obsession with Club Orange in Ireland and it’s always paired with a…

3. Hot chicken roll
A magical deli creation of breaded chicken and your choice of filling. The ultimate hangover cure.

4. Tayto sandwich
You may be a King’s person and it’s an old age debate but the majority tend to swing towards cheese and onion Taytos in their crisp sandwiches. With Brennan’s bread and REAL butter only, thanks.

5. Tea
It can be argued that this isn’t a food group – but who are we kidding? Tea is for all occasions and all occasions require tea. With milk. The great Barry’s vs. Lyons rages on…

6. Garlic cheese chip/Curry cheese chip
Or, as one SHEmazing! girl witnessed one night: curry and garlic cheese chips. While we don’t condone that absolute sin, a simple garlic cheese chip OR curry cheese chip hasn’t let us down yet.

7. Superquinn sausages
While we’re still on the fence about the green sausages unveiled for Paddy’s Day, no Irish fry is complete without a good old Superquinn sausie.

8. Brown bread
It seems almost impossible to find good, proper brown bread outside of this heavenly island. Perfect with REAL butter – we’re hungry now.

9. Triangular sandwiches
Associated with funerals or family gatherings, you spent your youth looking for the plain ham triangular sandwhich and are scarred for life from that one time you bit into an egg mayo one age 5. *shudder*

10. A good ol’ fashioned spud
Now, we hate to be a cliché, especially on St. Patrick’s Day, but is there anything better than a floury potato mashed with some REAL butter and a little salt sprinkled on top?

It’s almost that day of the year again and we are getting very excited!

While the annual St. Patrick’s Festival will take place in Dublin on March 17th, there is also so much going on around the country for you to check out as well.

Where will you spend the most Irish day of the year this 17th March?

Cork
The city comes to life with a four-day festival beginning on Saturday 14th March which runs right through until the 17th, when the parade will hit the streets of Cork. From tasty treats at the festival market to The Lee Sessions keeping Irish traditional music alive in the pubs of Cork, this will be a weekend to remember!

Limerick
The St. Patrick’s Day weekend events in Limerick city are every bit as exciting as people hit the races on Saturday 14th and Sunday 15th with the Limerick International Band Championship hitting the streets on Sunday. Tuesday will see not only the parade captivating interest by all, but also Limerick’s beloved Milk Market which will open on St. Patrick’s Day for a non-alcoholic celebration of food, crafts and music.

Galway
This year, the Galway parade’s theme is celebrating ‘Galway’s Cultural and Creative Community’. Not only will the World’s Strongest Man be in attendance but the Galway Community Circus will feature in the parade too!

Belfast
Belfast’s St. Patrick’s Day parade is set to be a lively affair indeed! Not only will Blue’s Simon Webbe be headlining at a free concert at Custom House Square, but Louis Walsh’s band Homeland will also take to the stage! If the boozy atmosphere is something you are trying to avoid this St. Patrick’s Day, there is also a free event in Custom House Square from 1pm-3pm.
