We all love a good cheescake, but the good people over at Delish have made an adults-only Paddy's Day cheescake – and it's so good, it's gone viral.

Spiking a dessert is nothing new, but if you really want to be happy on Paddy's Day, this recipe promises liquor in every single layer.

The chocolate ganache looks good enough to eat by itself and the Oreo base could possibly make it the best dessert ever.

You're favourite set of Irish twins will be storming Limerick city as they get set to head Limerick's St. Patrick's festivities on March 17. 

The hyperactive duo, who found fame on the X Factor, were very excited to accept an invitation from Limerick's city and county council to take part in the annual parade. 

"Limerick is a beautiful city, which is full of history and I hope it becomes the European Capital of Culture in 2020," said Edward to the Mirror. 

"I enjoy visiting Limerick because we can reconnect with our relatives and our heritage. It is an exciting, vibrant city with lots to see and do."

The pair actually have family ties to the county as their father hails from the city and played hurling with GAA club Na Piarsaigh. Their grandfather also played a large role in GAA in the area. 

The parade is being coordinated by the local council and no expense is being spared as the city hopes it will help them in their bid to become the European Capital of Culture in 2020. 

An estimated 80,000 people are expected to line the streets of the city to enjoy the parade on the day and we reckon they can up their guesstimate with the addition of these two. 

Bring on Thursday.

Negotiation talks were MEANT to take place today between SIPTU and Transdev Luas Drivers, but they were cancelled before they even started.

As more and more differences arise from both parties, the talks have been shelved for the time being, meaning that the Luas strikes planned for March 8th and Paddy's Day are going ahead.

They're even talking about further strike action after Paddy's Day since claims have been made that Luas drivers are taking prolonged toilet breaks to disrupt the service.

SIPTU's Eoin Reddy said: "If the allegation (of orchestrated toilet breaks) is true, it's serious and it wouldn’t be appropriate or right, (but) just because the company has said it's true, doesn’t mean that it is.

"This is a company that seems to want to spend more time demonising their staff in the media than rolling their sleeves up and negotiating with us."

Since the Luas strikes royally mess up the city, we just want this thing to be worked out once and for all.

The rest of the world might have a bit of a skewed vision of what it means to be Irish (Guinness, leprechauns, etc) but in truth, Irishness is all about those subtle things we do so well.

Here are just a few of them…

1. Taking the piss
Only in Ireland can unmerciful slagging be a sure sign of respect.

2. Being juuuuust late enough – and never early
"Doors at 6.30pm? Grand, we'll head over for 8 so." Of course, this kind of relaxed time keeping only works if the event you're attending is actually in Ireland. Otherwise, things might not end so well…

3. Tea drinking
Tired? Have some tea. Stressed? Have some tea. Broken leg? Have some tea.

4. Creating some of the weirdest and most wonderful slang on earth.
Niall has it down to a T.

5. Moaning
How else can you appreciate the good things in life if you don't spend time moaning about the bad things?

6. Having the craic
What is craic? If you need to ask, you're clearly not Irish.

 

7. Finding one another anywhere in the world
Even if you aren't a fan of hilariously tacky Irish bars, you're bound to come across a neighbour/neighbour's brother/neighbour's brother's girlfriend no matter where you are.

8. Appreciating our little island
If you can't dress all in green and make a fool of yourself on March 17th, when can you?

In previous years the unofficial aim for Irish people has been to get as far away from Ireland as possible on St. Patrick's Day, but this time around we're thinking we'll stay close to home!

Dublin's St. Patrick's Day events have been re-branded in recent years, changing from one parade on the 17th March to a four-day festival jampacked with cultural, creative and fun events.

Although this year's line-up will not be announced in detail until next month, a few of the main events have been revealed and we have to admit they sound great!

Last year a three-year theme of "Past, Present and Future" was created for March 17th's parade, beginning with a look back at Ireland's rich history in 2014. This year the theme continues moving forward with a "Celebrate Now" message, paying tribute to Ireland's culture of arts and creativity.

Other key events include the festival's Big Day Out in on Sunday 15th March, with street performances, Irish language classes, artistic events and open air shows overtaking Georgian Dublin, and of course the annual 5k road race.

If that all sounds a little too much like "family fun" to you, then we recommend checking out this year's I Love My City line-up, featuring artists from a variety of disciplines performing in intimate and once-off events across the city. 

So why not skip the pub this Paddy's weekend and discover what Ireland's cities have to offer? By the looks of this year's events, you won't regret it!

Paddy’s Day celebrations are just around the corner so here are some tasty cocktail recipes for you to try this weekend!

1. Old Fashioned

  • 50ml Irish whiskey
  • 25ml Angostura bitters
  • 1 sugar cube
  • Dash of water

2. Happy Paddy’s Day!

  • 25ml Vodka
  • 25ml Bailey’s
  • 15ml crème de menth
  • 10ml single cream
  • Mint leaf – to decorate

3. Irish Ginger Beer

  • 50ml Irish whiskey
  • 30ml ginger beer
  • 30ml apple juice

4. Manhattan

  • 50ml Irish whiskey
  • 20ml red vermouth
  • 15ml Angostura bitters
  • Maraschino cherry – to top

5. Bailey’s Coffee Dream

  • 25ml Bailey’s
  • 25ml Kahlua
  • 15ml Chocolate liquer
  • Milk, to fill

This is the perfect Paddy’s Day treat for anyone who is a fan of Baileys Irish Cream. With a little patience, you can indulge in this tiramisu shortly after your St. Patricks Day dinner.

What you need:

  • 190g Baileys Irish Cream
  • 350ml of strongly brewed espresso
  • 500g mascarpone cheese
  • 4 tablespoon of icing or superfine castor sugar
  • ½ teaspoon of vanilla extract or essence
  • 110g lightly whipped cream
  • 260g thin sponge finger biscuits
  • 20g of cocoa powder

Method:

  • Combine 125ml Baileys and the expresso in a shallow dish and then set aside.
  • Mix the mascarpone, sugar, vanilla and the remaining Baileys Irish Cream until it’s well combined and smooth.
  • Fold in the lightly whipped cream until well combined.
  • Cover and refrigerate.
  • Dip half the sponge fingers biscuit into the coffee and Irish Cream mixture and then place them in a single layer on the bottom of a 2 litre ceramic dish.
  • Spread half the mascarpone mixture over the biscuits and dust with cocoa powder.
  • Dip the remaining biscuits in the coffee and Irish cream mixture then lay it on top.
  • Spread the remaining mascarpone mixture on top of the biscuits and then dust with cocoa powder before refrigerating.
  • Refrigerate for at least 4 hours.

Don’t forget to decorate with whipped cream and dusted cocoa powder!

Did you know that a lot of Eastern Europeans take a spoonful of oil before drinking? Apparently it guards against a killer hangover.

But, if you want to avoid the dreaded hangover after Paddy’s Day (or any day for that matter), there are less extreme ways of doing so – none of which involve taking a shot of olive oil.

According to the co-author of The Secret To Skinny and The Nutrition Twins, incorporating heart-healthy good fats, like nuts and avocados into your pre-party-time meal is the way forward.

Avocados are particularly good because they contain high levels of potassium. This means you’re getting a head start on replacing the potassium lost during alcohol consumption.

Eating heavy meals might mean it takes you longer to feel the effects of alcohol, but it also gives your body extra time to process the drink’s by products, increasing your chances of dodging that hangover in the morning.

So remember, always eat healthy fats before you drink.
